Aloo Tikki | Potato Tikki

Aloo tikki - a popular North Indian street food. These are pan-fried potato patties that are delicious and serves great as a snack.

Serves: 10-12 small tikkis

Ingredients
3 medium-sized potatoes / aloo
2 small bread slices
1/2 tsp crushed fresh ginger
1/2 tsp Everyday amchur powder / dry mango powder
1/4 tsp Everyday garam masala powder
1/4 tsp Everyday turmeric powder
1/4 tsp Everyday red chilli powder
Salt to taste
Oil for frying

Instructions
Boil the whole potatoes till they become soft. Then once they cool down, peel off the skin of the potatoes and mash them well till there are no lumps.
Take a bread slice. Sprinkle a few drops of water on the bread and crumble it with your fingers. Add it to the mashed potatoes. Repeat with the other slice of bread.
Now add in all the spices along with salt. Mix well.
Make small even-sized balls of this potato mixture. Then flatten each ball with the palms of your hands.
Heat a non-stick tava / griddle. Add a few drops of oil on the tava. Place a small batch of the prepared tikkis on the tava. Drizzle little oil on the tikkis and let the tikkis cook on a medium-low flame.
Once they turn slightly brown in color on the underside, flip them over gently and drizzle a few drops of oil. Now keep flipping over the aloo tikkis (without adding oil) three or four times every few minutes till they are crisp on the outside. Once they turn brown on both sides, remove them. Repeat this for the remaining batch of aloo tikkis.
Aloo tikki is now ready to be served.

Notes
1. Boil the potatoes with their skin on.
2. Sprinkle just a few drops of water on the bread slices. The idea is to just make them little soft to crumble.
3. For variation, add a tbsp of chopped coriander leaves to the mashed potatoes mixture.
4. If you like a spicier version, add a finely chopped green chilli to the mixture.
5. Don't overcrowd the tava while frying. Arrange the tikkis on the tava leaving enough space between them. Fry the tikkis in batches depending on the size of your tava.
